Distillery: South Pacific


The distillery located near Lautoka northwest of the main island, was founded in 1980. With its volcanic soil and the lack of erosion, the sugar cane does not need any pesticides.

Picked by hand, it is low in tannins and high in sugar. Fermentation uses stream water; the distillation is made in a single pot still. This rum, distilled in December 2004, was aged in Ex-bourbon casks in Lautoka until 2010 and then imported into Europe.

TASTING NOTES

Nose: soft and elegant, with marine notes, sesame oil, ripe fruits with a spicy touch
Taste: tense with hints of cloves and passion fruit
Finish: elegant and smooth, dry and spicy
